A.K.A. Green Beans with Tomatoes, Garlic, and Herbs.
They are healthy and delicious and make a perfect side dish for any kind of meal.
Here is how we made them:
Blanch about 1 pound of French String Beans. Throw them into boiling salted water and cook them for about 6-7 minutes until they are cooked but still have a little bite to them.
While the beans are being blanched, thinly slice 1 cup of onions, finely mince 2 cloves of garlic, and peel, seed, juice, and dice about 4 ripe tomatoes.
Cook the onions slowly in 1/3 cup of olive oil.
Prepare a little herb bundle if you have cheesecloth or a sachet on hand... Keep in mind that I was cooking in my Grandmother's kitchen and she has unique cooking tools that I don't have. If you do not have a sachet just throw the herbs in the pan and pick em out when the sauce is done... that's what I always do :)
You will need 2 parsley sprigs, 1/3 of a bay leaf, 1/2 tsp. of thyme and 1 clove.
When the onions have turned translucent pour in the garlic and tomatoes with all their juices. Throw in the herb bundle and let it simmer away for about 25 minutes.
When the sauce is done cooking toss the herb bouquet and put the green beans in the pan.
Let them marry together for a few minutes and you can either serve them good ole buffet style (which is what I always do) or you can place them in a beautiful serving bowl just like my Grandmomma does :) I have to say, I like her way better. She makes everything more "special".
Now sit down to the table with your husband, parents, grandparents or roommate and enjoy this simple and healthy Provencal dish.
