Today I want to share with y'all my absolute FAVORITE banana bread recipe. My mom has made this scrump-diddly-umptious bread for quite some time. It has no nuts, just bananas, sugar, vanilla, and all that good stuff. I didn't take pictures of each step because it's so easy you won't need them! {Or if you were me reading this post, you wouldn't need them.} I tend to be a little "blonde" sometimes when it comes to everything cooking and baking, so I always appreciate a delicious yet SIMPLE recipe.
You will need:
1/2 cup oil
1 cup sugar
1 cup flour
1/2 tsp. salt
1 tsp. baking soda
2 eggs, beaten
2 mashed VERY RIPE bananas
1 tsp. vanilla
Mix everything together in a bowl. {I usually mix in the flour after I have mixed everything else... even though it's called "bread", you still want it to have a similar texture to cake... Basically, you don't want to develop the gluten in the flour by stirring it too much, which will end up making your bread/cake tough. See, there really is chemistry to baking!} Grease bread pan really well with Pam or something... no flour. Bake at 350 degrees for 45-50 min. uncovered. Poke a knife in it and make sure it's done.
Let it cool, and then have you a piece... or two...
Here's a little sidenote: My mom has baked this bread so many times and for some reason, {the "chemistry" I guess, maybe the varying sizes of bananas, who knows} it comes out different every time... It always tastes the same so don't worry about that, but just keep in mind that it might not look the same every time you make it.

ReplyDeleteI omitted the oil and used unsweetened applesauce. I think it keeps it super moist.

DeleteI'm trying this today! I've put in the unsweetened apple sauce as opposed to the oil and used brown sugar instead of white sugar as well as through in a few chocolate chips...mmm, mmm, mmm, mmm, mmmmmm!
ReplyDeleteBarb -- 3/17/14 -- Just made this (had no butter so this was PERFECT!) and it's a HUGE hit! I used 1/2 white sugar/1/2 brown sugar, added 1/2 container of vanilla yogurt, 1 cup chocolate chips and 1/2 chopped pecans! SO SUPER MOIST! Going on my Tried and True Pinterest Board! Thanks!
ReplyDeleteI love this recipe. I saw it on pintrest and have made it three times already about to make it again. I've used brown sugar and Splenda brown sugar. Both are good. Didn't have chocolate chips so I used heath pieces but the plain was better.

ReplyDeleteI used brown sugar instead of white and added some cinnamon...turned out to be the BEST banana bread I have ever made/had. Mmmm. The batter will look a little runnier than usual if you do it this way so you may have to let it bake a couple more minutes than usual, but it turns out great. Thanks for posting this recipe!

ReplyDeleteThe best! I have made it several times. (I used 1/2 whole wheat & 1/2 white flour) It is more of a cake texture than bread. Its my new favorite banana bread.
ReplyDeleteIs the favorite bread of my boyfriend! I make it all the time for him! I tried with 1/2 cup of sugar instead of 1 and for me is better! I also did one with no sugar and reduced the amount of oil (1/4 cup) and that was great too!
